Left Over Fried Rice - Slimming World Style

Well I'm still plugging away at loosing those extra pounds I gained at Christmas! I managed to gain 4lbs over the festive period, had a really good 100% on plan week & lost 2.5lbs, then I wasn't very good last week & managed to gain another pound. So this week I need to be on the ball again, so time to share another recipe. We really do love our rice round here, its probably part of our main meal 2-3 times per week, good job its free food on the slimming world plan.

My husbands favourite food from the Chinese is chicken fried rice, so I often make my own version without all the fat for him, or we have egg fried rice along with another dish. So at the weekend we had a gammon joint for dinner, Daniel (3.5) fund it a little tough & didn't eat much of the meat so I was reluctant to serve it cold with slimming world chips on Monday. I decided to turn it in to gammon fried rice, but you could use whatever you have left over, we have used ham, chicken, & turkey in the past, same with the veg use what you have in.

Left Over Fried Rice - Slimming World Style

Ingredients:

Left over meat trimmed of all visible fat diced
1-3 spring onions or 1 medium onion diced
1 pepper diced (or equivalent of frozen pepper)
6 mushrooms sliced or 1 tin of mushrooms drained
100g frozen peas defrosted or cooked & drained
250g (dry weight) of cooked white rice cooked with a veg or chicken stock cube
2 eggs
2 tbsp dark soy sauce
1 tsp sesame oil (optional adds 2 syns, but tastes more authentic)

Directions:


Heat the sesame oil in pan or spray with fry light. Cook onion until soft, add pepper, mushrooms, peas & diced meat & stir fry for 2-3mins. Crack the eggs in to a jug, whisk & season. I then scramble them in the microwave, as when I have done it in the same pan it sticks & burns. Add the cooked rice, soy sauce & egg (broken up small), stir fry until heated through & serve.

Everyone loved this meal, especially Daniel who said it was delicious & we needed to eat it everyday! Clean bowls all round....

Joseph has requested cupcakes & now I have located tinned pumpkin here in the UK (waitrose), I'm thinking that pumpkin cake it will be... just need to work out how to decorate them!

Mighty Lights - Review


The nice people at Walkers sent us some new crisps to try head of the new school year. 
These Mighty Lights come in three flavours, lightly salted, roast chicken & cheese and onion.
  • 30% less fat*
  • No artificial colours or preservatives
  • No MSG
  • Made from real potatoes
  • A source of fibre
  • Suitable for vegetarians

When the arrived we decided to give them a taste test. I put some of each flavour in a bowl for the boys to taste & guess which flavour they were. They both guessed right except for lightly salted which was guessed as 'crisp' flavour! When asked which was their favourite Joseph(4.5) decided straight away that it was the roast chicken, with Daniel(3) torn between the other two & eventually choosing cheese & onion. 


So they had the remaining crisps with their lunch that day. I was very naughty & decided to test some roast chicken mighty lights in a crisp sandwich, it was lush!


They contain 30% less fat than standard crisps & are therefore lower in calories, coming in at 114 kcal per 25g bag. I've mentioned before that I have lost weight following the slimming world plan & now I'm at target I have relaxed a little (ok a lot) but I still like to know the syn value of things so I know how naughty I'm being! These Mighty Lights come it at 5.5 syns, which is higher than baked crisps/snacks, but lower than standard crisps or other ridged crisps. They also taste (and crunch) as good as other ridged crisps.


Daddy has tried the lightly salted flavour & has confirmed them to be 'real crisps' (not those diet things) but would have loved a salt & vinegar flavour. I also had to test some of the lightly salted flavour with my favourite low syn salsa dip (1/2 syn per tablespoon) the ridges worked really well with the dip as did the flavour. I also like that the small bag stops me eating to much & putting the salsa away for another day!


Being lower in fat & calories Mighty Lights are the perfect treat for kids' lunchboxes. I still can't believe that its less than 2 weeks until Joseph starts school and I'm going to be back making lunch boxes, where has this summer gone? At lest with these & the Walkers Hoops & Crosses I'm sorted in the crisp department!

  All the flavours are suitable for vegetarians, and are available in shops nationwide. They come with a suggested selling price of £1.59 per 6 bag multi-pack, however as I write they are on offer in Tesco & Asda at £1 a pack.

Edible Boats


Every summer as part of a local raft race they run an edible boat regatta, with prizes for the best designed boats & also the boats that float the best.  We had a good think about what food items we could use to make our boats & decided to use 1/2 a pineapple for Josephs & 1/2 a melon for Daniels. 


I do confess to giving lots of help making these but i was most impressed by Josephs suggestion of using spaghetti to attach the decorations. I was assuming that wooden skewers & tooth picks would be banned however a winning boat contained them! I also debated weather the melon/pineapple skin would be allowed as not eaten but I'm sure it wouldn't kill you!


For our decoration we used toast cut out using cookie cutters, rice cakes, crackers & writing icing.


The boys were really chuffed with their boats & get a medal just for entering (thank goodness we made 2 boats). The really exciting bit was when everyone put their boats on the lake to see how well they sailed (floated). Ours did very well and lasted at least 10 mins, when I lost sight of them.


It was a great day out & we will be entering again in the future.

Hoops & Crosses House Lunch



When I heard about the Tots100 #HoopsandCrosses competition I was really excited as its been a while since I made a fun lunch for the boys (find our letter C lunch here). We all like Walkers new Hoops & Crosses crisps, the boys like the fun shapes (letter X & O) & I like that they have wholegrain & are only 4 syns a pack (beef are 4.5) on Slimming World. 


As we are now working on the letter H I decided to make a house with a checker board to play noughts hoops & crosses on. The white squares are cheese spread with pickle, the wholemeal are marmite & the triangles for the roof have marmalade filling. I then used cucumber for the grass With raisins & lettuce for a tree.



I made it as a plate to share for the boys, which worked well as each took what they wanted. They even made a small house once some of the sandwiches had been eaten.

Traffic Light Jelly

After seeing traffic light jelly on pintrest, I knew it would be perfect for Daniel's party. I found these clear plastic ups at Stax, as lots of places I tried only had white in a small size, so i snapped these up when I saw them! My Mum wasn't convinced that I would have any success in layering my jelly & I was a little worried after several trifle fails in the past. So here are my top tips for layering jelly:
  • Make Jelly slightly stronger than normal (approx 7/8ths of a pint)
  • Let it set for at least 3 hours before adding another flavour
  • Let the Jelly get to room temp before pouring it on to a set layer

I made this jelly the day before the party & was really pleased with the effect. If I was to make these again I would add a little green food colouring  to the lime jelly as the green was a bit pale. Also while looking for the original idea on pintrestto give credit (which i cant find!) I saw that someone used custard for the middle layer!
It went down well at the party, but the boys were pleased that there was a couple left over for them to enjoy at home. I will be posting more details from Daniels 3rd Birthday party soon.
